I've seen some shots like a RED flower or a colourfull flag in a B/W scene.

Could anyone explain How to do this? What may be the logic or theory behind this shot? I don't think they are colouring all those thousands of frames!!

Jerlin,

What you're most likely seeing there is a process most similar to chroma keying or 'greenscreening'. The highlighted object is a very distinct color in the shot. In post-processing, the technicians can isolate that color range and create a mask. Everything outside that mask is desaturated (made black and white) and whatever is inside it is colored. Hope this makes sense.

In that case the scene must be recorded with only that particular object with particular color. isn't it? ie, in a garden or roses, you can not isolate only one flower out of that!

Is this function available in Premier or such programs?

Sure you can, you just need to make the appropriate mask.

Autodesk Combustion can do this.

Sure you can! Just paint the rose you want in color a color that isn't in the garden. Neon orange is pretty unnatural. Then, you can re-color the object in post. You can also do an animated mask around the object like Chris said, then you only have to have a unique color within that mask.

Most video compositing/effects packages have these abilities (combustion, after effects, NOT premiere)
